Ch. 1 of Jeffrey Kurtzman's book "The Monteverdi Vespers of 1610: Music, Context, Performance" (Oxford University Press, 1999) has a critical study of the various editions and recordings of this vast and complex work. Two of the best editions are given below.
A third edition, by Hendrik Schulze (Bärenreiter, 2013) purports to be an "Urtext." It is perhaps best reserved for ensembles very experienced in historical performance practices.
